When I use the following code in my Wordpress blog:
[gallery gallery type="juxtapose" size="large" link="none" size="full" ids="66,63"]
[gallery gallery type="juxtapose" size="large" link="none" size="full" ids="63, 64"]
It works in Chrome on Windows/Chromebook But in Safari on my iPad/iPhone it looks like this:

Is this a known issue / is a workaround possible?

Looks like you've replaced it in the page, so I can't see what's going on. There are no known issues on iPad/iPhone, or elsewhere.
If I had to guess, I'd suggest checking your content for syntax errors -- for example, opening a div someplace and not closing it, or a closing div tag without a matching open, etc. -- as such might be breaking the structure of things.
