I would like to setup a payment via Stripe or Tide as I do not want to use PayPal how can I do this?

Can I safely assume we are discussing Backlight's Cart Add-on?
If so, the Cart Add-on currently supports two methods of checkout.
1. Online payments via PayPal.
2. Checkout without payment, a.k.a. "Invoiced Checkout".
If you don't want to use PayPal, then you need to use the second option. You may then contact the client externally to organize payment by whatever method you prefer.
It is not possible to "plug-in" your own payment methods for automated checkout.
We are exploring the possibility of alternative payment methods for future versions of the Cart Add-on, but we've made no firm decisions on this, nor do we have an ETA, as we are currently preoccupied with other aspects of Backlight's development.

You should be able to use just about any WordPress ecommerce plugin.
However, something like that wouldn’t be able to integrate with your Backlight albums.
But you could use the TTG Cart’s “Invoiced Checkout” and then have clients pay via whatever you’ve set up with the WP plugin.

I have invoiced check out enabled, but can't find where to configure the settings, do I change the product type to a physical product?

main Cart Settings are in Backlight> Cart>Settings
I'm not really sure what you're asking.
Unless you're selling digital downloads, then the product type would be physical product.

Cart > Settings > click Edit Settings > Checking Out: Enable Invoiced Checkout for Digital Purchases
