I'm probably missing something easy, but is there a way to see the date a Gallery/Album was created and uploaded?

you can look at that in the database
look at the "album" table in the publisher/master.sq3 database. Date Created is in the far-right side of the table. You'll need to horizontal scroll to it.
Log into Backlight, click on the phpLiteAdmin link in the main dashboard. The password is "admin"
use caution when poking around the database. Don't change anything unless you're familiar with databases.

Another option is to append ?data to a an album URL, then look for the 'created' field shown on the page
