I would like to publish in a set album, more than a hundred different album, but without seeing the image of these albums, only the titles. It's in the context of school photos, I want students to be able to order their photos online, but without seeing the pictures of other students. Is it possible ?

There is no option to exclude the thumbnails. But here's an alternative
Create custom thumbnails that are either blank, or the same color as the thumbnail cell background or have the titles you want (do this in Photoshop) or maybe even just a picture of the school.
In each album, there is a folder named "custom_thumbnails"
Via FTP, upload your thumbnail to each album's custom_thumbnails/ folder.
In Lightroom, Edit each album. In the Basic Tab, click the drop-down next to Cover Image and choose "Custom"
