How do I delete a folder galleries from the server? I want to reset this folder to start from scratch. I deleted from lightroom / publisher albums and albums set, but I would also delete the root folder to start over again.

Since you've already deleted albums via publisher, it's ok.
Besides, there is no way in Backlight to delete the galleries/ folder.
But if your galleries/ folder is empty, there's really no need to delete it; you're just going to have to upload the empty galleries/ folder again from Backlight.
