Where do i change the gallery text

Are you talking about the Galleries page? If so, edit the text for the Album Set template you're using for your top-level galleries page.
If you're talking about albums, you can place text in the Album template. This text can appear in every album if you choose. For customized text, enter that in Publisher in the Create/Edit Album dialog under the Page Content tab.
