I would like to have only one centered image for a gallery, yet I see the least number of columns as 3.
Suggestions?

Might not be the best way, and it will look like crap on mobile. But any other way probably involves hacking script. Maybe Matt will have a solution.
If you do use the padding option, you'll probably want some custom css to change the padding on smaller screens.
