Having found most answers in the online resources and this forum - I have a few items I would appreciate assistance on.
1) Is there a way to display galleries on the Galleries page non-Alpha/Numeric? If I have a gallery called 'Framed Photos' that I want at the end of all other galleries is there a way to to that?
2) Where can I choose a specific image as my 'Gallery Thumbnail'?
3) Where can I set the background color for my galleries 'Thumbnail and Title'? On the site, it's the white portion of the page I'm referring to: http://www.wyjim.com/imagesofthewest/galleries.php

Not really. The best way to place galleries on the Galleries page is to name them so they show up where you want them to. And that's alpha-numerically.
There are some advanced options that allow you to reverse or shuffle the order, but those don't really apply to what you're asking to do. But here they are: http://ce4.theturninggate.net/docs/doku … x_advanced

Appearance > the AutoIndex : Background-color and Background-color :hover

Yes, the background color setting should have bit me. I see I need to spend more time in the documentation.

Don't feel bad about missing some settings. There are A LOT of options and it takes some time getting used to where they all are (or even remembering they're there )
