Hi,
I sell albums to my clients and want to let the clients select the pictures the want in the album in the gallery by putting them in the cart. Is the only option to make a package, so the can select the album (with price) and ad there 10 or 20 time a print with an amount of 0,00 or is there some other way ? And what is the want to choose les than 20 but more than 10 ?
When adding products in mij cart admin wil the changes be made in all the already made and online gallerys or only in the new gallerys ?

If you're selling as a package price, then yes, use the package option.
There is no mechanism to require or limit the number images added to the cart. You'll need to provide instructions for your clients detailing the number of images they can choose.
Another option is to use the Client Response Gallery. The CRG has the capability of limiting the number of selections.
The CRG is not cart compatible however.

Whatever changes you make to a pricing scheme will affect all new and exisisting galleries/albums using that scheme

then the Client Response Gallery may be your best option. With it, your clients can choose option that you've set.
So, for instance, they can select an image and, in the options, tell you if it should be in the album.
