In the template I have checked Watermark and in Lightroom in the tumbnails and in the photos I can see it. I exported the gallery-template to my website and then publish a new gallery. There is no watermark to see! Neither in the thumbnails nor in the photos! See http://body-paint.at/fotos/10-ganzkoerp … eenblumen/ .

For Publisher albums you need to enable watermarking in Publisher settings.
Additionally, you can enable/disable watermarks on thumbnails in the Edit Album dialog

By standard Watermark is "Managed by Lightroom". And you can exclude watermarks in thumbnails and for photos-for-purchase. I had done this. I tried with other prepared items too. Nothing changed online! I use Lightroom 6 (newest version).
When I export a photo from Lightroom with using the Copyright-Watermark it is exported with the Watermark. The field Copyright is filled with my name and the city.

If you're trying to add watermarks to already published images you will need to republish those images.
Make sure that the "Push Metadata without updating existing photos" box is unchecked in Publisher setup

So there are 3 places where you have to control the watermark: publisher, ablum set and in the template too. Now it functions.

Actually, if you're using Publisher you need only set the Watermark there, it won't matter if you do or don't set enable it in the template.
