If I set any of the Publisher Setup fields to date it enters {month} {date}, {yyyy} which is the Current Date - but I want the Photo date which is {Month} {Date}, {YYYY}. Even if I manually enter the Photo Date the page defaults to the Current Date when it's published. How can I get it to show the Photo Date?

Yes I did. I tried the republish one photo trick but it didn't work. In fact it set the republished photo to October 23rd which is even stranger, because all of the other photos have yesterday's (the 28th) upload date. It was working when I started creating this template several days ago, but I've gone through several uploads of changes since then and at some point it stopped showing the correct date.
I put {Month} {Date}, {YYYY} in Metadata 1 in Publisher Setup. That's correct, isn't it?

{Month} {Date}, {YYYY} should work.
You will need to republish all images to push the new metadata. In Publisher setup, make sure that you've enabled the box to update metadata only. This will prevent the images from re-uploading, and should make the update speedy.

That's working now, thanks - and thanks for the hint to only publish metadata.
