do you mean putting the products in order? or how can people reorder (buy again) your products?
if order of products, when you create a pricing scheme, all your products are listed. You can use the drop-down to choose the order in which they appear in the add-to cart box.

As Rod said for the products. The fields are in the order of base price, then all others in alphabetical order.
