Is it possible to sell digital downloads without hosting all the full resolution image files on the server? For example, a customer orders a digital photo, then I am sent an email with the order and I then send the file to them directly. I'm asking because it would be too much space to host the thousands of photos from my galleries.

sure. Just treat them like a physical product. A print, for instance.

Alternatively, the CE4 cart supports post-purchase uploading of digital purchases. That means you can sell the images in the cart, but only need to prepare and upload the images that have been sold, rather than of all images that you want to make available for sale.
