I would like to have the following structure of Galleries:
. . .
Galleries
Africa
Europe
Turkey
Istanbul
Mosques
Street Scenes
Bosporus
Ephesus
Greece etc.
etc...
When I press the 'Galleries' link on the main menu I want the Galleries page to show Africa/Turkey/Greece...etc.
The Turkey gallery to show Istanbul/Ephesus.
The Istanbul to show Mosques/Street scenes/Bosporus.
How do I Publish galleries to those sub galleries. I know I can link to them, but where do they go when I use Publisher?
Do I put another gallery under the current gallery?
I am not certain what Pages do, but is that the answer?
I would like, after all is done, a hierarchy of gallery pages. (Does this make sense??)
I want to be able to publish galleries, sub-galleries and sub-sub-galleries in Publisher.
Right now I have created a Menu sub heading from the Gallery to Alhambra (which would be the same situation in a main gallery of Spain).

Not possible with your setup. With the folder structure you've outlined, when you go to your Galleries page you'll see:
Africa and Europe only. Europe, at least, needs to be an autoindex, not a gallery. (you can't put galleries inside of galleries)
When you click on Europe you'll go to an index page and see Turkey and Greece. These must be autoindexes as well (assuming the etc. after Greece means you want galleries in there too)
When clicking on Turkey you'll see Istanbul and Ephesus. Istanbul, at least, must be an autoindex.
Finally, when you click on Istanbul you'll see the three galleries. (created with Gallery)
Using Publisher, you'd set up the top-level gallery folder to be galleries/. You can then use Publisher to create Album Sets for Europe (and Africa, if you planned on putting albums (galleries) in that folder.
Turkey would also be an Album Set as would be Istanbul (you can create Album Sets within Album Sets). Mosques, Street Scenes, and Bosporus would be Albums.
The way you publish albums to Album Sets is to right click on the Album Set and choose Create New Album, then just double check in the dialog box to make sure you're publishing to the correct Album Set
