Can I assign different email addresses to different client response galleries?
I would like to have the response go directly into Podio where we manage assignments/projects!

Yes. Create clients as needed in Backlight and assign galleries per email.

But if you mean you want to change the destination of the feedback, then that is controlled in Backlight > Settings > Personalisation > Site Email. All emails sent from your site to you (Client Response, Cart orders, contact forms) are sent to that one email address. There is no provision for sending to a different email address on a per album basis.
