I have just started using this gallery to publish photos on an existing website and would like to be able to incorporate the favicon used by the rest of the site.
Is it possible change this? I do not see any options in the right hand panel and would like to be able to do it once so that all future updates I publish would include it.

this is not something you can set within the 2016 HTML Gallery interface.
it is with CE4 Gallery and Backlight
However, the html shows that a favicon is being used and where it can be found. If you want your favicon to appear in your galleries, you can upload one to each gallery. Upload to the gallery-name/lib/images/ folder. Make sure it's named favicon.ico so that the current icon will be over written.
